It is also a gastronomic paradise. Many traditional delicacies will take you back in time and their flavors will follow you throughout your life.
The Andalusians have every reason to be proud of the creamy soup “Salmorejo”.
It is made from tomato, bread, oil and garlic. The Andalusians serve the soup cold and not hot.
In addition, as a garnish they have boiled eggs in cubes and the traditional ibérico ham that is cut into small cubes.
The Spanish use a special bread called pan de telera and the tomatoes are first peeled and then mashed with the rest of the Salmorejo ingredients.
In Seville restaurants, this creamy soup always has a prominent place on their menu. Some chefs make variations that use pieces of tuna instead of ham.
