BORDEAUX: Magret de canard, the ultimate duck dish

Bordeaux is famous for its history in wine production. It is one of the cities that supplies a very large percentage of the planet with its wonderful wines.

The French city, however, is also famous for its excellent cuisine with delicious dishes that are at the level of Michelin stars.

One of them is magret de canard. It is a duck breast that is deep red in color, thick edges and incredibly flavorful.

Cookbooks say it comes from Mulard duck breast which is a cross between a female Peking duck and a male Barbary duck.

The thick layer of fat that the breasts have, melts when cooked like butter and creates an unreal taste and an incredible sensation on the palate.

Many magret de canard recipes use cognac, fruit sauce, vinegar and various other fine herbs that elevate the dish and rank it among the top dishes of France.

France and Bordeaux have every reason to be proud of this particular dish, as it is now served abroad not only in French restaurants, but also in restaurants with international cuisine.

What characterizes it is that it is cooked like a steak and for this reason it often looks like red meat is being cooked and not a duck. Most people prefer to eat it medium-rare.
